Pad see ew
Pad see ew a popular street food in Thailand is quite easily my favourite Thai noodle dish. A sweet, chilli, savoury with a touch of sour dish. Adjust chillies and sauces to suit your palate.
1kg fresh wide rice noodles
5 cloves garlic
Peanut oil
800gm chicken thigh fillets cut into strips
6 red chillies chopped fine
Chinese broccoli
3 eggs
Sauce
4 tbsp Kecap Manis
4 tbsp oyster sauce
3 tbsp light soy sauce
3 tbsp white vinegar
3 tbsp chilli soy sauce
2 tbsp Thai seasoning sauce
White pepper
Combine the sauce ingredients and keep aside.
Fry 5 cloves crushed garlic in peanut oil. Add chicken strips along with chillies and fry until chicken is cooked and slightly browned. Add chinese broccoli stems (keeping leaves aside). Push everything to one side.
Scramble the eggs until charred in the same wok.
Remove everything onto a plate.
Place the rice noodles in boiling water for a couple of minutes to separate. Add noodles and sauce to wok on high heat to caramelize noodles
Add chicken and egg mixture along with broccoli leaves to noodles. Heat through.
